  • 1 Tbsp. rock salt
  • 1 tsp. meat tenderizer
  • 3 Tbsp. soy sauce
  • 1 tsp. minced garlic
  • 1 Tbsp. grated fresh ginger or tsp. grated dried ginger
  • 3 or 4 lb. pork butt, slashed

    Combine first five ingredients.

    Rub over pork.

    Line 9 x 13-inch pan with aluminum foil, allowing foil to extend generously over one end.

    Place pork on foil.

    Fold foil over the pork, sealing well.

    Roast in 325° oven 4 hours.

    To serve:

    Shred with 2 forks or with fingers instead of carving.
