Ingredients
- 2 c. sliced fresh mushrooms
- 2 Tbsp. margarine
- egg substitute (equivalent to 6 eggs)
- 1/3 c. skim milk
- 2 Tbsp. flour
- about 1/8 tsp. freshly ground pepper
- 1 1/2 c. reduced fat, sharp Cheddar cheese, divided
- 1/4 c. cooked, drained and crumbled bacon or 3 slices, cut up deli ham
Directions

1Heat oven to 350°.

2Spray 9-inch baking pan with cooking spray.

3Melt margarine in skillet; add mushrooms.

4Stir-fry until tender; drain and set aside.

5Combine egg, milk, flour and pepper. Beat with whisk until bubbly.

6Stir in 1 cup of cheese, mushrooms and bacon or ham.

7Pour into prepared baking pan.

8Sprinkle with remaining 1/2 cup cheese over top.

9Bake at 350° for 25 minutes or until center is set.

10Serves 6.
