Oven-Roasted Beets *

  • 6 medium beets
  • 1 Tbsp. softened butter or oleo
  • salt
  • freshly ground pepper

Directions

    Trim beets, leaving some stalk intact (so they won't bleed). Place in baking dish with a little water on the bottom or wrap in foil.

    Bake in preheated 400° oven for about 50 minutes (a little longer for foil wrapped beets), until tender.

    Pierce with fork to check tenderness.

    When cool enough to handle, remove the skins; coat with butter and salt and pepper to taste.
