  • 6 to 8 medium onions
  • 6 to 8 carrots
  • 6 to 8 celery stalks
  • 6 to 8 medium potatoes*
  • 1 pt. (8 oz.) V-8 juice
  • 2 1/2 Tbsp. tapioca
  • seasoning to taste

Directions

    Place all ingredients (except potatoes) in well covered 5-quart casserole or Dutch oven.

    Bake at 325° for 3 1/2 hours. Makes 4 to 6 servings.
