Ingredients

  • 1 lb. lean meat in 1-inch cubes
  • 1 c. finely chopped onion
  • 1/2 tsp. minced garlic
  • 1/2 tsp. tomato puree
  • 1/2 bay leaf
  • 1/4 tsp. oregano
  • 2 Tbsp. oil
  • 2 Tbsp. any herb vinegar
  • 3/4 c. red wine
  • 1 1/2 c. peeled and cubed potatoes
  • 1/2 c. sliced carrots

Directions

    Combine the first 9 ingredients in a pan.

    Bring to boil on top of stove, then cover and bake at 375° for 1 hour.

    Add vegetables and bake for 30 minutes.

    Remove bay leaf.
