  • 3 lb. oxtails, cut in pieces
  • 1/2 c. diced onions
  • 1/2 c. diced carrots
  • 2 cloves
  • salt, pepper and paprika to taste
  • 1/3 c. flour
  • 1 qt. hot water
  • 1/2 c. chopped celery
  • 2 large cans whole tomatoes
  • 2 bay leaves
  • 1/2 c. fat

Directions

    Sprinkle oxtails with salt, pepper and paprika. Dredge in flour.

    Brown on all sides in a heavy pan with fat. Remove browned oxtails and place in a roasting pan.

    Mix carrots, onions, cloves, celery, tomatoes, bay leaves and water together.

    Pour over browned oxtails in a roasting pan.

    Cover and cook in a 350° oven until tender. Remove cover the last 1/2 hour of cooking. Stir occasionally.
