Ingredients
- 3 lb. oxtails, cut in pieces
- 1/2 c. diced onions
- 1/2 c. diced carrots
- 2 cloves
- salt, pepper and paprika to taste
- 1/3 c. flour
- 1 qt. hot water
- 1/2 c. chopped celery
- 2 large cans whole tomatoes
- 2 bay leaves
- 1/2 c. fat
Directions

1Sprinkle oxtails with salt, pepper and paprika. Dredge in flour.

2Brown on all sides in a heavy pan with fat. Remove browned oxtails and place in a roasting pan.

3Mix carrots, onions, cloves, celery, tomatoes, bay leaves and water together.

4Pour over browned oxtails in a roasting pan.

5Cover and cook in a 350° oven until tender. Remove cover the last 1/2 hour of cooking. Stir occasionally.
