- 1 quart oysters in the shell, or 2 dozen shucked oysters
- 1 egg
- 1 cup cornmeal
- 4 tablespoons ( 1/2 stick) butter, melted
- Salt and freshly ground pepper to taste
- 1/2 cup milk
Directions

1If the oysters are in the shell, scrub them under running water and shuck them.

2Drain and chop the oysters coarsely.

3In a large bowl, lightly beat the egg.

4Add the oysters, cornmeal, butter, salt, pepper and milk and stir to combine.

5Preheat the oven to 275 degrees.

6Lightly grease a small loaf pan and scrape in the batter, smoothing the top.

7Bake for 60 to 70 minutes, until the top is golden.

8Cool, then cut into slices to serve.
