  • 1 quart oysters in the shell, or 2 dozen shucked oysters
  • 1 egg
  • 1 cup cornmeal
  • 4 tablespoons ( 1/2 stick) butter, melted
  • Salt and freshly ground pepper to taste
  • 1/2 cup milk

Directions

    If the oysters are in the shell, scrub them under running water and shuck them.

    Drain and chop the oysters coarsely.

    In a large bowl, lightly beat the egg.

    Add the oysters, cornmeal, butter, salt, pepper and milk and stir to combine.

    Preheat the oven to 275 degrees.

    Lightly grease a small loaf pan and scrape in the batter, smoothing the top.

    Bake for 60 to 70 minutes, until the top is golden.

    Cool, then cut into slices to serve.
