- Recipe for one double pie crust
- 1 qt. oysters, reserve juice
- 4 or 5 potatoes, cooked or microwaved, peeled and cubed
- 1- 12 oz. can evaporated milk
- 2 stalks celery, cubed
- 1 medium onion, cubed
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Heat oven to 400 degrees.

2Saute onion and celery.

3Set aside.

4In saucepan, melt butter, add flour and salt.

5Mix.

6Add evaporated milk and enough oyster juice to make 1 1/2 cups of white sauce.

7Place oysters, potatoes, celery and onion in bottom crust.

8Pour white sauce in.

9Cover with top crust.

10Aerate by using a knife to slit a few small holes in top crust.

11Be sure top crust and bottom crust are well sealed.

12Place on aluminum foil on cookie sheet.

13Cook for 30 minutes or until crust is done.
