- 2 Tbsp. butter or oleo
- 1 Tbsp. flour
- 1 small white onion
- 1 pt. oysters
- 1 1/2 pt. milk
- parsley
- celery or celery seed
- salt and pepper
Directions

1Make a roux as follows:

2Melt the butter or oleo; add flour and onion, chopped fine, and 8 oysters, drained of their liquor and chopped in small bits.

3Brown all, stirring constantly to avoid burning, then add the oyster liquor and an equal amount of water. Add a few stalks of chopped celery (this gives it a good flavor). Season with pepper and salt.

4Let simmer slowly for 15 or 20 minutes.
