Oyster Soup

Ingredients

  • 1 doz. oysters
  • 1 Tbsp. flour
  • 2 c. heavy cream
  • 2 sprigs, chopped parsley
  • 2 dashes Worcestershire sauce
  • salt and white pepper
  • red pepper
  • 1 c. chopped celery
  • 1 Tbsp. butter
  • 1/2 c. chopped green onions
  • 1 dash Tabasco sauce
  • 1 c. water from oysters

Directions

    Make roux with butter and flour.

    Add celery, seasoning and water from oysters.

    Stir 2 or 3 minutes over medium heat.

    Add green onions, parsley and cream.

    Bring to a boil.

    Add Tabasco, Worcestershire sauce and oysters.

    Cook 4 to 5 minutes, stirring constantly.

    Remove from heat.
