  • 1/2 c. chopped onion
  • 2 slices chopped bacon
  • 1 Tbsp. bacon fat
  • 1 c. potatoes, peeled and diced
  • white pepper
  • 1 1/2 c. boiling water
  • 3 c. oysters and their liquid
  • 2 c. half and half
  • 1 c. heavy cream
  • salt

Directions

    Melt the bacon fat in a heavy skillet.

    Saute bacon and onion in the fat until bacon is crisp.

    Add the potatoes, water and liquid from the oysters.

    Cover skillet and cook until potatoes are done.

    Add oysters and cream.

    Simmer until oysters curl at the edges.

    Season to taste.
