  • 4 Tbsp. butter
  • 3 large leeks, trimmed and chopped (only small amount of green)
  • 4 potatoes, peeled and cut into 2-inch cubes
  • 6 c. water
  • salt and pepper
  • 1 c. heavy cream
  • 1 qt. shucked oysters (liquid reserved)

Directions

    Melt butter and saute leeks over medium heat, about 5 minutes. Add potatoes, water, salt and pepper.

    Simmer 20 minutes.

    Puree the mixture in a food processor.

    Return to saucepan and bring to a boil.

    Add cream, oysters and reserved liquid.

    Cook several minutes.
