Ingredients
- 1 small bunch fresh spinach
- 1 c. champagne
- 1 pt. oysters with juice
- 2 Tbsp. butter
- 2 cloves garlic, chopped
- 1/2 c. whipping cream
- flour, water and oil for roux
Directions

1Make a small amount of roux and set aside.

2In separate pan saute garlic in butter for about 5 minutes.

3Stir in champagne, cream and juice of oysters; simmer 5 minutes.

4Put in oysters and lay spinach on top.

5Cover and simmer just until spinach is wilted. (Do not overcook, oysters will get tough.)

6Take spinach out 1st, spreading it on serving dish.

7Lay oysters on top.

8Add roux to remaining sauce to thicken.

9Spread sauce over all and serve.
