- rock salt
- 1 1/2 sticks butter
- 3 Tbsp. minced green onion
- 3 Tbsp. minced parsley
- 1/2 c. bread crumbs
- 1 1/2 c. chopped raw spinach
- 2 Tbsp. Pernod
- 1 tsp. dry celery powder
- 2 tsp. lemon juice
- 1/4 tsp. cayenne
- 24 (1-inch) bacon pieces
- 24 oysters on half shell
Directions

1Preheat oven to 425°.

2Fill 4 (8-inch) pie pans with rock salt.

3Place 6 oysters on each plate; set aside.

4In heavy saucepan, heat 1/2 stick butter until foaming.

5Add onion and cook until onions clear.

6Stir in ingredients down to cayenne; add remaining butter.

7Mix well and simmer a couple of minutes.

8Spoon mixture evenly on oysters.

9Top each with bacon piece and bake 8 to 10 minutes or until bacon is done.
