  • 2 12 cups chopped cooked chicken
  • 23 cup salsa
  • 13 cup green onion, slices (you can also use regular onions)
  • 34 teaspoon ground cumin
  • 12 teaspoon oregano leaves, crushed
  • 12 teaspoon salt
  • 8 flour tortillas
  • 14 cup melted butter
  • 1 cup shredded cheese, monterey jack or 1 cup cheddar cheese

Directions

    Combine chicken, salsa, onion, cumin, oregano, and salt in saucepan; simmer 5 minutes or until most of liquid has evaporated.

    Brush one side of tortillas with butter.

    Spoon about 1/3 cup chicken mixture onto center of unbuttered sides; top with 2 T shredded cheese.

    Fold sides over filling; fold ends down.

    Place seam side down in 13x9 baking dish.

    Bake in preheated oven at 475* about 13 minutes or until crisp and golden brown.
