- 1 lb salmon fillet
- 1 teaspoon olive oil
- 13 cup finely diced onion
- 2 tablespoons corn
- 1 tablespoon thinly sliced green onion
- 14 teaspoon salt
- 18 teaspoon black pepper
- 2 tablespoons fine cornmeal
- 1 tablespoon butter
Directions

1Coat salmon with oil and bake at 375 for 20 minutes.

2Cool to the touch and flake salmon.

3In a bowl, combine salmon, onion, corn, green onions, salt and pepper.

4Form into 12 patties.

5Lightly coat both sides with cornmeal.

6Refrigerate for at least 1 hour before serving.

7In a skillet, melt butter over medium and fry cakes until golden, 2-3 minutes per side.
