  • 1 lb salmon fillet
  • 1 teaspoon olive oil
  • 13 cup finely diced onion
  • 2 tablespoons corn
  • 1 tablespoon thinly sliced green onion
  • 14 teaspoon salt
  • 18 teaspoon black pepper
  • 2 tablespoons fine cornmeal
  • 1 tablespoon butter

Directions

    Coat salmon with oil and bake at 375 for 20 minutes.

    Cool to the touch and flake salmon.

    In a bowl, combine salmon, onion, corn, green onions, salt and pepper.

    Form into 12 patties.

    Lightly coat both sides with cornmeal.

    Refrigerate for at least 1 hour before serving.

    In a skillet, melt butter over medium and fry cakes until golden, 2-3 minutes per side.
