Ingredients

  • 1 whole chicken
  • 3 c. Uncle Ben's rice
  • 1/2 lb. ham
  • 4 oz. green peas
  • 2 carrots, cut in small sticks
  • 1/2 green bell pepper, cut in small sticks
  • 3 oz. butter
  • 1/2 lb. shelled, deveined shrimp in shell
  • 1 medium onion
  • 1 doz. cleaned Manila clams
  • 1 tsp. saffron
  • 3 Tbsp. capers
  • 3 Tbsp. pitted green olives
  • 5 c. Campbell's chicken broth

Directions

    Cut chicken into small pieces and fry in butter.

    Add rice after chicken is fried and stir for approximately 3 minutes.

    Add chicken broth.

    Chop onion and ham into small pieces, then add the rest of the ingredients.

    Mix together and cook on stove range over low heat.

    Cover and stir occasionally until cooked.

    (Do not add any salt!)
