- 5 new potatoes, scrubbed
- 1 onion
- 1 cauliflower
- 1-1/8 tbsp. garam masala
- 1 tsp. chili powder
- Oil
- 6 oz. g. flour
- 1/2 tsp. ground turmeric
Directions

1Cut potatoes into medium-thick slices.

2Slice onion into thick rings and cauliflower into thin florets.

3Mix together 1-1/2 tsp.

4salt with 1/2 tsp.

5garam masala and 1/2 tsp.

6chili and season all vegetables.

7Heat oil in a deep-fryer or chip pan to 190C (375F).

8Sift gram flour with the remaining salt, garam masala, chili powder and turmeric into a mixing bowl.

9Gradually stir in about 200 ml.

10water to make a smooth, thick batter.

11Carefully dip potato slices into batter.

12Fry over a medium heat until golden brown.

13Drain on paper towels and leave to cool.

14Continue until you have coated and fried all the vegetables.

15Once cold, re-heat oil to 190C and re-fry in batches.

16Drain on towels.

17Serve hot or cold with mint chutney (see Recipe #4452).
