Ingredients

  • 1 can hearts of palm
  • 1 stalk celery
  • 1 small onion
  • 2 slices bacon, chopped
  • 1 tbsp capers
  • 1 tbsp red peppercorns
  • 1/2 cup roquefort or other blue cheese
  • 1-2 tbsp walnut oil
  • 2 tsp cider vinegar
  • 1-2 tsp poppy seeds
  • salt to taste

Directions

    Crumble the cheese into a mixing bowl. Mix in the vinegar and oil to create a dressing.

    Slice the palm hearts and celery on the diagonal. Slice the onion very thin. Add all ingredients to dressing in bowl and stir. Adjust salt. Serve cooled.
