- 14 teaspoon kosher salt
- 4 (4 ounce) beef tenderloin steaks, trimmed,1 inch thick
- 4 cloves garlic, smashed
- 1 cup medium-dry sherry
- 1 tablespoon low sodium soy sauce
- 14 teaspoon black pepper
- 1 tablespoon butter
- 1 tablespoon grated, peeled fresh ginger
- 1 tablespoon bottled ground ginger
Directions

1Sprinkle salt in a large cast iron frypan over medium high heat.

2Add steaks, Sear/saute for 2 minutes on each side.

3Remove from pan.

4Add garlic, saute 10 seconds.

5Add Sherry, cook for 30 seconds, scraping pan to loosen browned bits.

6Return steaks to pan, cook 2 minutes.

7Add the soy sauce and 1/4 teaspoon black pepper.

8Place steaks on individual plates.

9Remove pan from heat, and stir in butter and ginger until blended.

10Divide sauce evenly over steaks.
