- 8 fish filets (firm flesh)
- 4 Tbsp. butter
- 2 Tbsp. oil
- 1/4 c. Parmesan cheese
- 2 c. bread crumbs
- salt and pepper to taste
- 2 eggs
- 1 Tbsp. oil
- 4 Tbsp. butter
- 1 1/2 lemons, squeezed
Directions

1Melt butter

2and oil in pan.

3Mix bread crumbs, cheese, salt and pepper; blend.

4Mix oil and eggs together.

5First dip fish in flour, then in egg mixture; drain and coat with bread crumbs.

6Fry in hot butter and oil for 3 to 5 minutes.
