Pan Fried Kangaroo

  • 2 kangaroo fillets per person
  • 2 tablespoons olive oil
  • freshly ground black pepper to taste
  • 1 parsley sprg, chopped

Directions

    Place the fillets on a plate, give each fillet a light coating of olive oil, then dust with black pepper and pat the pepper into the meat.

    Heat the pan or griddle until very hot, brush lightly with oil. Seal the fillets quickly on both sides on a high heat.

    Cook for 3 minutes on each side. Transfer to a warmed plate and place into a warm oven to rest.

    Serve with a salad and warm bread rolls. Garnish with a sprinkle of chopped parsley.
