- 2 large eggs
- 3/4 c. milk
- 4 tsp. oil
- 1 tsp. vinegar, lemon juice or brandy
- 1 c. flour
- dash of salt
- 3/4 c. plus 2 tsp. water
Directions

1Beat the eggs. Add the milk, oil and vinegar.

2Add flour and salt. Beat until free from lumps. Add the water and mix well. Leave the batter for 30 or more minutes.

3Pour a little oil into a frying pan and allow the pan to heat well.

4Pour the excess oil off and fry the batter.
