- 1 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- 2 Tbsp. granulated sugar
- 1 egg
- 1 c. milk
- 3 Tbsp. safflower or vegetable oil
Directions

1Preheat griddle to 350°.

2Beat together egg, milk and oil. Add dry ingredients to liquid and stir just until mixed.

3Do not overmix!

4A few small lumps are okay.

5Spray griddle with Pam, oil or margarine.

6Pour batter onto griddle with 1/4 cup measuring cup.

7Cook until bubbles come to surface and the edges are dry. Turn over to brown other side.

8Makes about 15 (5-inch) pancakes.
