  • 4 TBS vegetable oil
  • 1 bunch scallions (white and pale parts only - green tips reserved for garnish)
  • 3 large minced garlic cloves
  • 1 inch grated ginger
  • 1 tsp (or to taste) crushed red pepper
  • 2 large grated carrots
  • 1 cup roughly chopped snow peas
  • 3 cups shredded cabbage (preferably Chinese or Bok Choy)
  • 3 TBS soy sauce
  • 1 cup low sodium chicken broth
  • lime wedges (garnish)
  • serano chilies (garnish)
