- 1 c. sugar
- 5 1/4 oz. margarine
- 1 jigger pisco or cognac
- 1/2 c. candied fruit
- rind of 1 orange
- 1 Tbsp. whole anise
- 4 c. or more flour
- 3 eggs
- 1/2 c. seedless raisins
- 1 Tbsp. azahar water or 1 tsp. orange extract
- 2 oz. caked yeast
- 1 c. milk
Directions

1Place the yeast in 3/4 cup warm milk; let rest 3 to 4 hours. Beat the egg whites with the sugar

2until it forms peaks.

3Add the pisco and the orange extract; set aside.

4Add the yeast into a big bowl.

5Add the rest of the warm milk, the melted butter, the egg yolks, the grated rind and the anise.

6Slowly add 3/4 of the flour and the egg white mixture.

7Beat until smooth.

8Set aside in a warm space until the next day.
