Ingredients

  • 1 c. sugar
  • 5 1/4 oz. margarine
  • 1 jigger pisco or cognac
  • 1/2 c. candied fruit
  • rind of 1 orange
  • 1 Tbsp. whole anise
  • 4 c. or more flour
  • 3 eggs
  • 1/2 c. seedless raisins
  • 1 Tbsp. azahar water or 1 tsp. orange extract
  • 2 oz. caked yeast
  • 1 c. milk

    Place the yeast in 3/4 cup warm milk; let rest 3 to 4 hours. Beat the egg whites with the sugar

    until it forms peaks.

    Add the pisco and the orange extract; set aside.

    Add the yeast into a big bowl.

    Add the rest of the warm milk, the melted butter, the egg yolks, the grated rind and the anise.

    Slowly add 3/4 of the flour and the egg white mixture.

    Beat until smooth.

    Set aside in a warm space until the next day.
