  • 1 papaya ripe
  • 1 vanilla beans a Tahitian
  • 1 brown sugar
  • butter dab of
  • 1 ounce rum
  • vanilla ice cream Tahitian

Directions

    Cut papaya in half. Clean out seeds from the centre of the papaya.

    Slice the vanilla bean open and scrape the seeds out. Spread seeds on the insides of both papaya halves.

    Sprinkle brown sugar on each half of papaya and spread butter into mixture. Pour rum over both halves.

    Wrap each half separately in tin foil and bake at 250 degrees for 15 to 20 minutes.

    Unwrap papaya saving the juice from inside foil.

    Place a scoop of Tahitian vanilla ice cream on top of each half and pour juice over.
