Name: Paper Towel Corn Pudding
Ingredients: 1 can drained whole corn; 1 can creamed corn; 2 eggs, beaten; 1 pkg. Jiffy corn muffin mix; 1 small can chopped green chilies; 1 medium chopped onion; 2 Tbsp. chopped green pepper; 2 c. sour cream; 2 c. Cheddar cheese; 1 stick margarine

1 pkg. Jiffy corn muffin mix
1 small can chopped green chilies
1 medium chopped onion
2 Tbsp. chopped green pepper
2 c. sour cream
2 c. Cheddar cheese
1 stick margarine

Directions

Saute onion in margarine.

Fold corn into eggs; add Jiffy mix. Add chilies and green pepper.

Spread in 9 x 13-inch baking dish. Spread Cheddar cheese and sour cream on top.

Bake at 375° for 45 minutes.
