Parchment Paper Fish

Ingredients

  • 6 - 8 oz filet of fish. Salmon, cod, halibut, sea bass, and tilapia all work well.
  • vegetables, sliced. Asparagus, zucchini, bell peppers, etc. Keep it simple!
  • fresh lemon, lime, or other citrus of your choice, sliced thin
  • butter, just a tablespoon or two
  • herbs of your choice. Dill, rosemary, and thyme are good ones.
  • a splash of white wine, if desired
  • salt and pepper to taste

Directions

    Preheat oven to 375 degrees.

    Cut and fold a piece of parchment paper - about 15x15 inches in size - in half and lay it down on a rimmed baking sheet. Open it flat.

    On one fold of the parchment, put your thin sliced vegetables down, largest on the bottom. Top your veggies with a bit of butter. Add your herbs, and top it with a little salt and pepper.

    Place your fish of choice on top of your veggies. Put a bit more butter on top of your fish. Sprinkle it again with a little salt and pepper, and top it with the thin slices of citrus.

    Fold the top closed like a book, and pleat the edges of the parchment to make a neat, tight half-moon shaped packet.

    Bake the packet for 15 - 20 minutes, or until the fish is opaque all the way through.
