- 1 cup Walnuts
- 2 Tablespoons Olive Oil
- 1 Tablespoon Honey
- 2 slices Eggplant
- 4 slices French Crusty Bread
- 1/4 pounds Prosciutto Di Parma, Thinly Sliced
- 1 cup Arugula
- 1/2 cups Parmesan Shavings
- Balsamic Vinegar, To Taste, For Drizzling
- Extra Virgin Olive Oil, To Taste, For Drizzling
- Salt And Freshly Ground Pepper
Directions

1Combine the cup of walnuts, 2 tablespoons of olive oil, and 1 tablespoon of honey in a blender.

2Pulse until the walnuts are well ground up, but the mixture is not completely smooth.

3Afterwards, heat a grill/grill pan/whatever ya got (I use a panini press).

4Lightly coat the eggplant and bread with olive oil.

5Place them on the grill for a couple of minutes on each side, or until they are lightly charred.

6Now assemble your sandwiches!

7I spread on the walnut mixture first, then put on the ingredients in this order: prosciutto, arugula, parmesan, and eggplant.

8To top it off, drizzle a little olive oil and balsamic vinegar.

9Season with a dash of salt and freshly ground pepper.
