- 1/2 c. all purpose flour
- 1/4 c. grated Parmesan cheese
- 3 Tbsp. cornmeal
- 1 tsp. paprika
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 egg white
- 1/4 c. fat-free milk
- 4 catfish fillets (6-oz each)
Directions

1Preheat oven to 350°.

2In a shallow dish, combine the flour, Parmesan cheese, cornmeal, paprika, salt and pepper; set aside.

3In another shallow dish, beat egg white and milk.

4Dip fillets in milk mixture, then in flour mixture.

5Place in a 13 x 9 x 2 inch baking dish coated with nonstick cooking spray.

6Bake uncovered for 35 to 40 minutes or until fish flakes easily with a fork.
