- 1 c. carrot slices
- 1/2 c. celery slices
- 1/4 c. chopped onion
- 1 1/2 tsp. salt
- 1/2 c. Parmesan cheese
- 1/4 tsp. pepper
- 2 c. boiling water
- 1/4 c. butter
- 1/4 c. flour
- 2 c. milk
Directions

1Combine potatoes, carrots, celery, onion, salt and pepper in a pot.

2Add boiling water and simmer until tender.

3Make a white sauce of the butter, flour and milk. Stir into the cooked vegetables. Add Parmesan cheese and simmer a little longer.
