  • 1/2 c. Parmesan cheese
  • 1/4 c. olive oil
  • 1/2 tsp. red pepper flakes
  • 4 large russet potatoes, cut lengthwise into eighths
  • 1 tsp. basil

Directions

    Place Parmesan cheese, olive oil, basil and red pepper flakes in large bowl.

    Add potatoes and toss until well coated.

    Arrange in single layer on baking sheet.

    Bake at 325° for 1 hour, turning the potatoes after 30 minutes.
