- 4 chicken breasts
- 1 cup Italian seasoned breadcrumbs
- 2 tablespoons olive oil
- 1 small onion
- 2 cups chicken bouillon
- 1 cup orzo pasta
- 12 cup parmesan cheese
Directions

1Pound chicken breasts flat and bread with Parmesan and bread crumb mixture.

2Fry in pan with a bit of olive oil and butter.

3Preheat a 8 inch pot with a tight fitting cover over moderate heat.

4Add oil, onion and garlic and saute for 2 or 3 minutes.

5Add broth to the pan and bring to a boil.

6Stir in orzo and return broth to a boil.

7Cover pot and reduce heat to simmer.

8Cook 15 minutes, stirring occasionally, or until liquid is absorbed and pasta tender.

9Remove lid and stir in cheese.

10Season with salt and pepper to your taste.
