- 4 c. new potatoes (1-inch size) or any peeled potatoes, cut in 1-inch cubes
- 1/2 tsp. salt
- 1/4 c. butter or margarine
- 2 Tbsp. dry, crumbled parsley flakes (leaves)
- 2 qt. water
Directions

1Put cold water in large pot.

2Add salt and potatoes.

3Bring to boil and lower heat.

4Simmer until tender but not cracking or crumbling.

5Drain potatoes.

6Add margarine and parsley flakes and toss until evenly coated.

7Serve hot.
