- 2 lbs coarsely chopped peeled parsnips
- 3 tbsp butter
- 1 clove garlic, crushed
- 3/4 cup light cream, heated
- 1 tbsp torn parsley leaves
- None None Cracked black pepper
Directions

1Boil, steam or microwave parsnips until tender; drain. Mash parsnip with butter, garlic and cream.

2To serve, sprinkle with parsley leaves and cracked black pepper to taste.
