- 1 baked (9-inch) pie shell
- 3 c. pureed plain parsnips, unseasoned
- 2 Tbsp. soft butter
- 1/2 c. + 2 Tbsp. honey
- 1/4 tsp. powdered cloves
- 2 Tbsp. orange rind
- 2 eggs, beaten
- 1/2 tsp. cinnamon
- 1/2 tsp. mace
- 1/4 tsp. allspice
- 1 tsp. fresh lemon juice
Directions

1Beat all other ingredients together until smooth, reserving the 2 additional tablespoons of honey.

2Pour the parsnip filling into the partially baked pie shell and drizzle the remaining honey over the top.

3Bake at 375 for 50 to 60 minutes.
