  • 1/2 c. chopped green bell peppers
  • 1/4 c. green onions
  • 1/4 c. pimento
  • 1/2 c. margarine
  • 6 Tbsp. all-purpose flour
  • 1 Tbsp. parsley flakes
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. paprika
  • 3 to 4 c. milk
  • 1 c. shredded Cheddar cheese

    Preheat oven to 350°.

    Saute green peppers, green onions and pimento in margarine in skillet for 1 minute.

    Stir in flour, parsley flakes, salt, pepper and paprika.

    Add milk gradually, stirring constantly.

    Cook over medium heat until thickened, stirring constantly.

    Add 1 cup cheese; mix well.

    Spoon potatoes into 9 x 13-inch baking pan.

    Pour sauce over potatoes, stirring to coat.

    Sprinkle with remaining 1 cup cheese.
