  • 1 (12 oz.) container low-fat cottage cheese
  • 1 c. sour cream
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 tsp. lemon juice
  • 1/2 c. dry vegetable soup
  • 2 tsp. grated fresh onion
  • 1 (8 oz.) can water chestnuts, drained and chopped fine

Directions

    Process cottage cheese until smooth.

    Press spinach between paper towel until barely moist.

    Add spinach and remaining ingredients to cheese mixture.

    Stir well.

    Cover and refrigerate about 3 hours.

    Serve with crackers or raw vegetables.

    Makes about 3 cups.
