- 1 cup self-rising flour
- 1/3 cup powdered sugar
- 1 cup flaked coconut
- 8 tbsp (1 stick) butter, melted
- 1 can (14 oz) sweetened condensed milk
- 1/3 cup strained fresh passionfruit pulp, plus additional to serve
- 1/3 cup lemon juice
Directions

1Preheat the oven to 350°F. Grease a foil-lined 11 x 7 inch baking pan, extending the foil over long sides for handles.

2Sift flour and powdered sugar into a bowl. Stir in coconut and butter. Press mixture firmly into bottom of prepared pan. Bake 10-12 mins, until edges are lightly browned. Remove from oven.

3Mix condensed milk, passionfruit pulp and lemon juice in a medium bowl. Pour mixture over crust.

4Bake 10 mins. Cool in pan on a wire rack 30 mins. Cover and refrigerate until chilled. Cut into bars. Drizzle with additional passionfruit pulp, to serve.
