Passover Nut Cake

  • 10 eggs, separated
  • 14 teaspoon salt
  • 1 cup sugar, scant
  • 1 cup walnuts, finely ground or 1 cup almonds
  • 3 tablespoons cinnamon

    Preheat oven to 325 degrees.

    Beat the egg whites with the salt.

    Beat the egg yolks and the salt and add the sugar 1 tablespoon at a time.

    Blend nuts and cinnamon.

    Add nut mixture to yolks in thirds (turn beater to low).

    Add whites.

    Bake in springform pan without grease.

    Bake 1 hour.

    Use a knife to get it off sides of pan after its cooled.

    Let cool before removing from pan.

    Invert immediately.
