Pasta Bean Casserole

Ingredients
- 3 c. cooked pasta (noodles, macaroni, etc.)
- 2 c. cooked pinto beans (3/4 beans, 2 1/2 c. water)
- 1/3 c. olive oil
- 2 medium onions, minced
- 3 ribs celery, chopped
- 1 to 1 1/2 tsp. sea salt
- 1/2 tsp. sage
- 1/2 tsp. basil
- 1/2 tsp. mustard
- 1 1/2 c. grated cheddar cheese
- 1/2 c. water
Directions

1Preheat oven to 350°.

2Place a large frying pan on medium heat and add oil.

3When oil is hot add onion; stir a minute, add celery and stir a minute more.

4Reduce heat to low, add salt and herbs and cook about 5 minutes more.

5Remove from heat and stir in grated cheese.

6Mix pasta and beans together with the vegetable-cheese mixture and place in a lightly oiled casserole.

7Add 1/2 cup water to keep from burning.

8Bake, covered, for about 30 minutes, removing cover during last 5 minutes.

9Serves 6 to 8.
