Pasta Bean Casserole

Ingredients

  • 3 c. cooked pasta (noodles, macaroni, etc.)
  • 2 c. cooked pinto beans (3/4 beans, 2 1/2 c. water)
  • 1/3 c. olive oil
  • 2 medium onions, minced
  • 3 ribs celery, chopped
  • 1 to 1 1/2 tsp. sea salt
  • 1/2 tsp. sage
  • 1/2 tsp. basil
  • 1/2 tsp. mustard
  • 1 1/2 c. grated cheddar cheese
  • 1/2 c. water

    Preheat oven to 350°.

    Place a large frying pan on medium heat and add oil.

    When oil is hot add onion; stir a minute, add celery and stir a minute more.

    Reduce heat to low, add salt and herbs and cook about 5 minutes more.

    Remove from heat and stir in grated cheese.

    Mix pasta and beans together with the vegetable-cheese mixture and place in a lightly oiled casserole.

    Add 1/2 cup water to keep from burning.

    Bake, covered, for about 30 minutes, removing cover during last 5 minutes.

    Serves 6 to 8.
