Ingredients

  • 10 0z pasta (spaghetti, fettuccine, linguine)
  • 2 Tbsp cannola or vegetable oil
  • 1 Tbsp chopped garlic
  • 1 Tbsp chopped shallot
  • 4 egg yolks
  • 4 oz ham, bacon or pancetta (julienne cut)
  • 2 cups heavy cream
  • 1 cup white wine
  • 1 cup shredded Parmesan cheese
  • Salt
  • Pepper

Directions

    Cook the pasta until al dente and set aside.

    Heat a saute pan (medium to medium high) and add oil, garlic, shallot. Cook 1 minute, and add ham, wine and salt and pepper to taste. Cook for an additional 3 minutes. Beat the eggs and cream. Add the pasta and the egg/cream mixture and cook for another 2 minutes. Remove from heat and add the Parmesan cheese. Serve immediately.
