- 1/4 (16 oz.) pkg. spaghetti, cooked
- salad oil
- 3 green onions, finely chopped
- 1/4 c. flour
- 2 Tbsp. Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 egg
Directions

1Coarsely chop cooked spaghetti; set aside.

2In small saucepan over medium heat in 1 tablespoon oil, cook green onions until tender.

3In medium bowl, mix flour, Parmesan cheese, salt, pepper, egg and 1/4 cup water.

4Stir in green onions and spaghetti until well coated.

5Heat 2 tablespoons oil until very hot in a nonstick skillet.

6Into hot oil, drop mixture by 1/4 cups into 4 mounds, about 2 inches apart.

7With pancake turner, flatten each mound slightly.

8Cook fritters until golden brown on both sides.

9Drain on paper towels.
