  • tomatoes-whole fresh
  • olive oil
  • basil
  • garlic
  • salt&pepper

Directions

    concasse the tomatoes then squeeze the scraps over a mesh seize to create juice over the concasse.

    press cloves of garlic and place on top of the tomatoes in bowl, then add chiffonade of basil.

    cover and allow to sit at room temp until ready to use.

    place olive oil in pan, add tomato mixture, briefly saute, season and toss pasta in the mixture....garnish w/ parm
