- 3 Tbsp. olive oil
- 1 large clove garlic, pressed
- 1 c. thinly sliced broccoli stalks
- 3/4 c. thinly sliced carrot
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 green onions, split and cut into 1-inch pieces
- 2 tomatoes, diced
- 1/3 c. dry white wine
- 8 oz. linguini
- 1 c. grated Parmesan cheese
Directions

1Measure oil into a large skillet or wok. Add garlic, broccoli, carrot, salt and pepper.

2Saute, stirring, 3 minutes. Turn off heat to preserve bright color.

3Cook pasta; drain. Return to pot to keep warm. To skillet, add onions, tomatoes and wine. Cover and cook 3 minutes. Serve vegetables over pasta. Top with Parmesan.
