Ingredients

  • 3 Tbsp. olive oil
  • 1 large clove garlic, pressed
  • 1 c. thinly sliced broccoli stalks
  • 3/4 c. thinly sliced carrot
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 green onions, split and cut into 1-inch pieces
  • 2 tomatoes, diced
  • 1/3 c. dry white wine
  • 8 oz. linguini
  • 1 c. grated Parmesan cheese

Directions

    Measure oil into a large skillet or wok. Add garlic, broccoli, carrot, salt and pepper.

    Saute, stirring, 3 minutes. Turn off heat to preserve bright color.

    Cook pasta; drain. Return to pot to keep warm. To skillet, add onions, tomatoes and wine. Cover and cook 3 minutes. Serve vegetables over pasta. Top with Parmesan.
