Ingredients

  • 1 lb. penne
  • 1 tbsp. olive oil
  • 13 c. minced shallots or yellow onions
  • 1 yellow squash
  • 1 c. cherry tomatoes
  • 1 1/2 c. frozen peas and carrots
  • .67 c. heavy cream
  • 13 c. chicken broth
  • 1 tsp. salt
  • 1/4 tsp. Freshly ground pepper
  • 1/4 c. finely shredded Parmesan

Directions

    Cook penne according to package directions, drain.

    Meanwhile, heat oil in a large skillet over medium-high heat.

    Add shallots and saute 2 minutes.

    Add squash and saute 2 minutes, tossing several times until just tender.

    Add tomatoes, peas and carrots, saute 2 minutes.

    Add cream, broth, salt, and pepper, and cook 2 minutes.

    To serve toss sauce with penne and Parmesan.

    Sprinkle with extra cheese, if desired.
