- 1 lb. penne
- 1 tbsp. olive oil
- 13 c. minced shallots or yellow onions
- 1 yellow squash
- 1 c. cherry tomatoes
- 1 1/2 c. frozen peas and carrots
- .67 c. heavy cream
- 13 c. chicken broth
- 1 tsp. salt
- 1/4 tsp. Freshly ground pepper
- 1/4 c. finely shredded Parmesan
Directions

1Cook penne according to package directions, drain.

2Meanwhile, heat oil in a large skillet over medium-high heat.

3Add shallots and saute 2 minutes.

4Add squash and saute 2 minutes, tossing several times until just tender.

5Add tomatoes, peas and carrots, saute 2 minutes.

6Add cream, broth, salt, and pepper, and cook 2 minutes.

7To serve toss sauce with penne and Parmesan.

8Sprinkle with extra cheese, if desired.
