  • 1 lb. rigatoni or pasta of your choice
  • 1 small onion, chopped
  • 4 cloves garlic, finely chopped
  • 1 medium zucchini, peeled, halved lengthwise and sliced
  • 1 c. broccoli cuts
  • 1/2 c. lima beans
  • 1/2 c. peas
  • 2 carrots, cut in thin strips
  • 3/4 c. crushed tomatoes
  • 1/4 c. heavy cream
  • 3 Tbsp. olive oil
  • salt and pepper
  • grated cheese

Directions

    Combine olive oil, onion and garlic in a large skillet.

    Add all vegetables and season to taste with salt and pepper.

    Cook on medium-high heat (stirring occasionally) until vegetables are crisp-tender.

    Remove from heat.

    Serve over cooked pasta. Sprinkle with grated cheese.
