Ingredients
- 1 lb. rigatoni or pasta of your choice
- 1 small onion, chopped
- 4 cloves garlic, finely chopped
- 1 medium zucchini, peeled, halved lengthwise and sliced
- 1 c. broccoli cuts
- 1/2 c. lima beans
- 1/2 c. peas
- 2 carrots, cut in thin strips
- 3/4 c. crushed tomatoes
- 1/4 c. heavy cream
- 3 Tbsp. olive oil
- salt and pepper
- grated cheese
Directions

1Combine olive oil, onion and garlic in a large skillet.

2Add all vegetables and season to taste with salt and pepper.

3Cook on medium-high heat (stirring occasionally) until vegetables are crisp-tender.

4Remove from heat.

5Serve over cooked pasta. Sprinkle with grated cheese.
