  • 1 lb. vermicelli
  • 1 Tbsp. olive oil
  • 3 Tbsp. chopped garlic
  • 3 c. chopped Roma or red tomatoes (fresh)
  • 3/4 c. sun dried tomatoes, thinly sliced
  • 1/2 c. fresh basil
  • 1/2 c. chopped pine nuts
  • 1 c. chicken stock
  • salt and pepper

    Boil pasta.

    Heat oil and saute garlic.

    Add nuts, tomatoes and basil.

    Cook 2 to 3 minutes.

    Add chicken stock, salt and pepper.
