  • pinch of red pepper flakes
  • 2 tsp. sweet butter
  • 1/2 c. vodka
  • 1 (28 oz.) can Italian crushed tomatoes
  • 1/2 pt. heavy cream or half and half
  • 5 to 10 fresh sliced basil leaves
  • 3/4 c. grated fresh Parmesan or Romano cheese
  • 1 lb. tubular pasta (such as rigatoni or penne)

Directions

    Saute red pepper flakes in butter for about 1 minute.

    Add vodka and bring to boil.

    Lower heat; add tomatoes and simmer ten minutes.

    Add cream and basil and simmer briefly.
